Beautiful handcrafted Japanese tsuchime ("hammered") finish reduces drag and prevents foods from sticking. Meticulously handcrafted in Japan, the 9 12" Shun Premier Slicing Knife is ultra-sharp for clean, precise slicing of meats and poultry including hams, roasts and turkeys. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. The layered Damascus cladding with 68 outer layers (34 per side) supports the core, helps in food release and provides additional stain resistance. The hammered tsuchime finish features a textured pattern that reduces drag and helps prevent foods from sticking to the blade. The walnut PakkaWood handle is infused with a water-resistant resin and contours to comfortably nestle in the hand. Beautiful, stain- and rust-resistant Shun knives take at least 100 handcrafted steps to complete and resemble hand-forged knives of ancient Japan. Elegantly boxed for gift giving. Shun (pronounced: Shoon) is Japanese for "at the peak of perfection." The Shun brand, made by the Kai Corporation, one of Japan's preeminent blade manufacturers introduced its exquisitely styled and exceptionally sharp Japanese-style knives to American kitchens in 2002.
