This all-purpose knife is a go-to kitchen utensil for food preparation. Composite blade technology brings together a VG10 san mai cutting edge with a Japanese 420 J stainless steel upper for high performance at the edge and high value in your kitchen. Two blade sections are laser cut and fit together like a jigsaw puzzle before being braze welded for durability. The resulting wavy line resembles the traditional Japanese sword hamon. Hand-sharpened, 16° double-bevel blade. VG10 is clad on each side with one layer of stainless steel for stain resistance. Sleek handle in a traditional Japanese shape is made from textured PP/TPE polymer blend for a secure grip and balance.
