A sharp light weight knife, but....This knife is very sharp and should provide many good years of use, but I cannot recommend this particular blade as an all purpose utility knife.I find it is not exactly a great fit for me for several reasons. First the handle is a little small (both in length and girth and I do not have large hands). Another concern for me is its light weight. While it is okay with softer produce such as lettuce, tomatoes, broccoli, onions, and celery, I definitely prefer a heavier knife with a heftier handle, which allows the weight of the blade to do more of the work and the user to have better control of the blade for harder items such as turnips, sweet potatoes, and even carrots.I have not tried this knife for chicken yet, but I think its sharp thin blade may work well as a boning knife for separating chicken meat from the bones/carcasses of an uncooked chicken (and for removing the skin from the meat).
