Taiyo is Japanese for “sunrise,” a reference to the stunning Damascus pattern of rays that illuminate the blade surface of this knife. A limited-edition release from Shun, the Taiyo chef's knife is superbly crafted in Japan following the traditional shape of a kitisuke , a multipurpose blade favored by Japanese master chefs. The blade's core of super-dense SG-2 steel takes and holds a fine, lasting edge. An octagonal handle is accented with nickel silver sub-bolster and end cap.
  • Traditional kiritsuke knife, a favorite of Japanese master chefs for all-purpose chopping as well as fine slicing.
  • Blade is constructed with a core of SG-2 powdered steel for a super-sharp cutting edge.
  • 160 layers (80 on each side) of nickel silver and stainless-steel Damascus cladding, which supports the core and forms a beautiful sunrise ray pattern.
  • Laminated Micarta handle in traditional Japanese octagonal shape becomes rounder as it near the bolster for a comfortable grip.
