Beautiful Japanese tsuchime finish (tsuchime meaning "hammered") acts like a series of hollow-ground cavities to reduce drag that enhances the razor-sharp blade performance. The 5 12" Shun Premier Nakiri Knife is meticulously handcrafted in Japan with an ultra-sharp blade for precision chopping, slicing and dicing of vegetables and fruits. In Japanese, Nakiri means "vegetable knife" and the Shun Nakiri with its strong, straight edge is ideal for vegetables, produce and even delicate herbs. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. The layered Damascus cladding with 68 outer layers (34 per side) supports the core and provides additional food release and stain resistance. The hammered tsuchime finish features a textured pattern that reduces drag and prevents foods from sticking to the blade. The walnut PakkaWood handle is infused with a water-resistant resin and contours to comfortably nestle in the hand.
