The compact blade on this multi-prep knife is engineered to exacting detail, with a wide hearty spine providing the heft and rocking motion of a santoku, plus the quick-release of a hollow edge. Indentations on the blade reduce drag and channel juices to prevent sticking. The 4 12" blade is the perfect size to dice onions or potatoes, mince or crush herbs or garlic, with firm handling control. With the wide spine, this Wusthof chef's knife slices thin strips from plump bell peppers, wedges apples or sections citrus. The slight curve enhances balance and the rigid blade absorbs impact, allowing the clearance and precision to chop, mince and dice comfortably, without knuckles touching the cutting board. Efficient blade size results in lighter weight for repetitive prep, without hand fatigue.
